Description of Participant and Expertise:
ACETUM is currently the largest manufacturer of Balsamic Vinegar of Modena in the whole industry. Founded in 1991, its partners boast a decennial expertise in production and marketing of this peculiar vinegar.
 

The Company has three different plants in the Modena area, devoted to the fermentation, blending/ageing and bottling of the product. The Company has a R&D division, which has availability of two internal laboratory, fully equipped.
The Company in 2005 manufactured over 15mio. litres of Balsamic Vinegar, which is about 25% of the total industry output.

Participating people
2 researchers with experience in food production and analysis will be involved in the project.
