WP5 – Monitoring techniques

WP 5 will focus on the development of dedicated monitoring techniques to asses contaminant population shift due to the different processes, survival and recovery of sub-lethally and damaged and non-cultivable cells of selected pathogenic species in relation to the four technological processes applied and compositional and physico-chemical parameters. In particular, protocols for the various molecular techniques will be set up and their will be used to collect data on the survival and recovery ability of pathogens inoculated at low levels in samples subjected to the various technological processing.
